On the name

Higuma — ヒグマ — is the brown bear of northern Japan, and a quiet nod to the bear that watches over Madrid.

Between the two cities we found the same belief: that coffee made slowly, with attention, is one of the small rituals worth protecting. Everything we'll offer is chosen in that spirit — considered, unhurried, made to last.
